Happy Saturday Night

What is everyone unto tonight?

I've been bust taking photos and knitting tonight. I wanted to make some of the knitted headbands for myself.

I have arthritis pretty bad and if i get cold it can be pretty painful, i love these headbands as they keep the top of my head, my ears and most importantly the nape of my neck  nice and warm. I started making these about 7 years ago and they really do make a difference.

I get them knitted usually and i think oooh that's lovely i will pop that in my store so today and tomorrow is about making some for myself for this winter!

Make your own jewellery for yourself for gifts or to sell

Make your own jewellery - Jewellery making selection kit now available in my Etsy store:
The idea behind the kits:
A lovely lady, mentioning no names (Zoe ;-)) asked me to create a little selection kit for her as i sell aspects of jewellery making items in my Etsy shop. Zoe wanted to try jewellery making but didn't want to shell out a lot of money to see if she liked it... and i'm pleased to say she loved it, it got me thinking as i have only really listed single items before such as bead strands, books, tools and wires so I have made up some little kits for my shop
I hope you like them :-)
Any feedback would be awesome, i plan on making a few for different budgets i have 2 live at the moment 1 for £9.99 and 1 for £14.99 but plan on doing a few different price points.

I'm loving this duo combination of Yarns

I have had one of those fabulous Crafty Days when i have done everything i set out to do

I got all my jobs done this morning, did a bit of marketing. Made a couple of cards then this afternoon i got out my knitting needles

Grey and White Furry super stretchy and chunky headband / Earwarmers have been double stranded knitted with James C Brett Faux Fur and Stylecraft Nordic Super Chunky Yarn which makes it super thick and furry and luxurious!

This is so fluffy and soft and very stylish. The combination of these two awesome yarns is so beautiful, i hope this comes across in the photos. This headband has used quite expensive yarns which is why this is a little bit more expensive. But as my Mother say's .... YOU get what you pay for!

Well it's all finished, i hope you like it

All ready for posting and available to buy now in my Etsy store

Soda Bread recipe By Paul Hollywood

Soda Bread
Makes 1 small loaf
Bake 30 minutes
Ireland's most famous bread is made with two of the oldest foods, wheat and buttermilk. The acid in the buttermilk reacts with the bicarbonate of soda and creates the rise. If you have kids, do teach them how to make soda bread, because it's great to be able to put a loaf on the table within 45 minutes. Once you've mastered it, try adding some grated Wexford cheese (vintage Irish Cheddar) and chopped raw onion to the dough.

Ingredients

- 250g plain white flour
- 250g plain wholemeal flour
- 1 tsp salt
- 1 tsp bicarbonate of soda
- About 400ml buttermilk

Method

1.Heat the oven to 200°C/Gas6. Line a baking tray with baking parchment.
2. Put the flours, salt and bicarbonate of soda into a large bowl and mix well. Make a well in the centre and pour in half the buttermilk. Using your fingers or a round-bladed knife, draw the flour into the buttermilk. Continue to add the buttermilk until all the flour has been absorbed and you have a sticky dough. You may not need all the buttermilk – it depends on the flour you use.
3. Tip the dough out on to a lightly floured surface, shape it into a ball and flatten it slightly with the palm of your hand. It is important to work quickly, as once the buttermilk is added it begins to react with the bicarbonate of soda.
4. Put the dough on the baking tray. Mark into quarters with a large, sharp knife, cutting deeply through the loaf, almost but not quite through to the base. Dust the top with flour.
5. Bake for 30 minutes or until the loaf is golden brown and sounds hollow when tapped on the base. Leave to cool on a wire rack. Eat on the day of baking – or toast it the next day.

FRENCH BREAD Stick recipe

INGREDIENTS

1 level dessertspoon fine salt
350ml hand-hot water

EQUIPMENT

Equipment: You will need a large baking sheet very well buttered and one or two large polythene bags, greased on the inside with a few drops of oil. A roasting tin.

METHOD

Begin by measuring the flour, salt and yeast into a bowl, using a spatula mix everything together thoroughly. Make a well in the centre of the mixture, then add the water.
Now mix to a dough, starting off with the spatula and using your hands in the final stages of mixing, adding a spot more water if there are any dry bits. Continue to mix and press the dough in the bowl for about 1 minute so that the dough is evenly mixed (it will feel little sticky but that’s fine) then put the bowl of dough into a large polythene bag and close it with a clip.
Leave it until it looks as though it has doubled in bulk, which will be about 2 hours at room temperature.
After that, punch out all the air, then knead briefly and divide the dough evenly into two.
Next roll one piece into a sausage shape about 40cm long then place it on a lightly floured surface and use the heal of your hand to flatten it out to about 12cm wide all the way along.
Now fold one long edge of dough into the centre, pressing it down with your fingertips and do the same with the other long edge. Turn the roll over so that the seam is underneath and place it on a well-greased baking sheet.
Repeat with the second piece of dough.
Then place the baking sheet in an oiled polythene bag (you may need two overlapping bags) for about 1¼ hours at room temperature.
Pre-heat the oven to 230°C, gas mark 8. Position a shelf in the top third of the oven for the bread and place a roasting tin in the oven on a lower shelf.
When the sticks have risen, put a kettle on to boil. Then remove the bag and slash each stick diagonally five times with a sharp serrated knife, then dust the loaves with flour.
Place them near the top of the oven, and then quickly pour boiling water into the hot roasting tray below (so that it is about 2cm deep).
Quickly, but gently, close the oven door and time them for 25 minutes then turn the loaves over and give them a further 5 minutes, then cool on a wire rack.

Happy Saturday!! Feeling rather festive today

I have had a real chill out day it's been lovely! The weather outside has been awful so we stayed in.

MARY BERRY'S COFFEE AND WALNUT CUPCAKES - something for the weekend!!

Make afternoon tea special with these palely pretty cakes topped with crunchy walnuts
By Mary Berry

INGREDIENTS

For the cupcakes:
  • 1 tbsp instant coffee
  • 115 g butter, softened
  • 140 g self-raising flour
  • 140 g caster sugar
  • 2 tbsp milk
  • 2 large eggs
  • 25 g walnuts
For the coffee icing:
  • 2 tsp instant coffee
  • 100 g butter, at room temperature
  • 225 g icing sugar
  • 12 walnut halves, to decorate

METHOD

1. For the cupcakes: Preheat the oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with paper muffin cases. Put the coffee granules and 1 tablespoon of boiling water into a mixing bowl and stir until smooth. Add the butter, flour, sugar, milk, and eggs and mix with an electric whisk until smooth. Stir in the walnuts, then spoon into the muffin cases.

2. Bake in the centre of the oven for 2025 minutes or until risen and golden brown. Transfer to a wire rack until stone cold.

3. For the icing: Put the coffee granules and 2 teaspoons boiling water into a bowl and stir until smooth. Add the butter, sift in the icing sugar, and stir until smooth and free of streaks.

4. Spoon on to the cupcakes, then decorate each one with a walnut half.

TIPS AND SUGGESTIONS

The cupcakes can be made and iced up to 1 day ahead. Freeze without the icing for up to 1 month.

How to soften butter:
To make sure the butter is soft enough to work with, cut it into small cubes and pop into a bowl of lukewarm water. After 10 minutes or so, squeeze one of the cubes it should be lovely and soft.?You can then drain them and use them.

These are made in muffin tins, which are fairly large, but make them in bun tins if you wish you should get 18 fairy cakes.
